Crispy succulent coconut shrimp bursting with tons of coconut flavor!

    Directions

    Step1

    Beat together 2 eggs, 1/4 cup of water and 1 teaspoon of coconut extract (optional) and set aside. Place 1/3 cup cornstarch in bowl for dusting the shrimp.

    Step2

    Place one cup of sweetened coconut in the blender or food processor and pulse a few times, this will make it finer and help it stick to the shrimp and give it more coconut flavor. In a separate large bowl mix the remaining 1/3 cup cornstarch, all of the coconut, 1 tablespoon of sugar, 1/2 teaspoon of salt and 1/2 cup of flour.

    Step3

    Heat oil on medium high heat. Roll shrimp in cornstarch, then dip in egg mixture, then roll in coconut mixture until completely coated. Carefully place shrimp in hot oil and fry till coating turns a golden brown, about a couple minutes each side.

    Step4

    Drain shrimp on a paper towel lined plate or rack.

    Serve immediately. Enjoy!
